- Cake dough
- 3 medium eggs
- 50 grams of sugar
- Zest of 1/2 lemon
- 50 grams of cake flour
- 15 ml of cream

- 150 grams of white yogurt
- 20 grams of sugar
- 90 ml of cream
- 1/2 teaspoon lemon juice
Instructions for making yogurt rolls
- Place some paper towels in a colander and sprinkle on the yogurt. Place the strainer in a bowl, wrap it in plastic wrap and let it drain overnight in the refrigerator.
- Line a baking sheet with parchment paper. Separate egg yolks and whites. Sift cake flour. Heat the oven to 200 °C.
- Add the egg whites together with the sugar and beat until the meringues are stiff.

- Add lemon zest and mix well. Add the egg yolks one at a time and mix well.

- Add the cake flour and mix with a rubber spatula. When the powder is mixed, pour in the cream and continue to mix.

- Pour the batter into the tin and smooth the surface. Cook for 8-10 minutes at 180°C. When the cake is golden, check that it is ready by inserting a toothpick.

- Remove the sponge cake and parchment paper from the pan and let cool on a wire rack. Place the baking sheet on top of the cookies and let them cool (you can also wrap them in plastic wrap).

- Place the cream and sugar in a bowl and beat until foamy. Add the strained yogurt and lemon juice and mix well.
- After the cake has cooled completely, lightly line the back of the cake. Cut a piece of sponge diagonally at the end, as shown in the picture.

- Spread the cream over the sponge, piling more on the side closest to you and moving away from you. Cover tightly with parchment paper and refrigerate for 1 hour.

- Trim both ends to fit and that's it.

- If you try to double the amount of cream, you can decorate the canyon and the outside, which will look nice.
