How to Make Homemade Tarte aux Fruits (Fruit Tart)

- 1 egg yolk (or whole egg)
- 1 few drops of vanilla oil
- 110 grams of flour for cakes
- Almond cream
- 50 grams of butter
- 50 grams of sugar
- 1 egg
- 50 grams of almond flour

Steps for making Fruitcake.
- For the cake batter: Bring the butter to room temperature (or in the microwave for a few seconds) and level it with a spatula to soften it. Mix with a whisk until you obtain a smooth and shiny cream.

- Add the icing sugar to the butter in stages, beating with a fork until white and fluffy.

- Add the egg yolk and vanilla oil and mix well. Incorporate the flour with the spatula. Once the dough is homogeneous, wrap it in cling film and place it in the fridge for 30 minutes to 1 hour (rest overnight if possible to prevent the cake from shrinking during baking).

- Take the dough out of the freezer, press it between two sheets of paper and roll it out to a thickness of 2 mm. Grease a pan with soft butter (or oil) and sprinkle with breadcrumbs. Spread the dough on the edge of the mold and make a hole in the bottom with a fork. Put it in the fridge.

- Prepare the almond cream: You make it like pie dough, but with different ingredients. Also use a whisk instead of a spatula to mix. (Powdered sugar, sugar/egg yolk, eggs/cake flour, almond flour.)
- Pour the mixture from step 5 into the crust from step 4. If you do this with a spray bottle, the cakes will look great when baked (you can use a spoon instead). Smooth the surface and leave a small notch in the center.
- Bake in a preheated oven at 170°C to 180°C for about 35 minutes. (If it seems to be burning, cover with a piece of foil.) Cool on cake after baking.
- When the cake has cooled, remove the mold and spread the surface with the jam. Cut and dry the fruit and use it to cover the cake. Cover with Napage and put mint leaves on it if you have any.
