Instructions for preparing tea cakes.

  1. Preparation. Pour the butter into a saucepan and set at room temperature. Mix the ingredients. Preheat the oven to 180 degrees Celsius.
  2. Beat the butter until homogeneous. Add sugar in 2-3 batches, mix well until faded and melted.
  3. Beat the eggs well, add 2-3 batches of butter-sugar filling, mix the toppings well. Then add the almond flour, then the tea leaves taken from the tea bag in that order, mixing well each addition.

  5. Pour the flour into the mold evenly. Add to taste and bake in preheated oven for about 15 minutes. The cooking time depends on the oven or mold, so adjust it yourself.
  6. When the sweets have turned golden, try inserting a toothpick into them. If they clean it without hitting it, it is over. Allow the cupcakes to cool slightly on the shelf, cover with polyethylene film and allow to cool completely.

I wanted to give it a milky flavor, so as ingredients I used 60 grams of cake flour, 20 grams of skimmed milk powder, 20 grams of cornstarch - 1/2 baking powder (for 6 cups of cake). As a filling I used nuts, hazelnuts and pesto. I used this version for step by step photos.
  9. [2] I used apple tea for this version. To the main mass I added the raisins, moistened the cakes with calvados to finish.
  10. [4] This is a version of chamomile tea (I made 3 cupcakes). I used 40 grams of softened butter and missed the almond flour. To the main ingredients were added 4 g of chamomile, 1/4 of lemon peel - 1 teaspoon of lemon juice.
  11. In step 3, after you have added the eggs, add the lemon peel and lemon juice to the chamomile owners in that order, then proceed to the next step.
  12. However, this is the chamomile I used. The aroma is subtle so I used two 2g bags. Please determine the strength of the tea according to your taste.
